A Beginner’s Guide to Home Canning
How to preserve food safely, confidently, and one jar at a time
There is something deeply satisfying about standing back and looking at a row of jars you preserved yourself.
Maybe they are filled with strawberry jam made when berries were abundant, pickles from cucumbers that seemed to appear in the garden overnight, peaches tucked away at the height of summer, or tomatoes that will eventually become dinner on a cold winter night.
Home canning can help us waste less food, preserve what comes from the garden, take advantage of seasonal produce, and slowly build a pantry filled with foods we recognize. It is one of those traditional skills that can make a modern kitchen feel a little more connected to the seasons.
But if you have never canned before, it can also look intimidating.
There are jars, special lids, bubbling pots, pressure gauges, headspace measurements, processing times, altitude adjustments, and enough warnings about doing things incorrectly that it can seem like this is a skill you were supposed to learn from your grandmother.
You weren’t.
You can learn it now.
And just like everything else at A Bit More Homemade, you do not need to become an expert overnight. Start with one batch of jam. Then maybe make pickles. Learn how a boiling-water canner works. When you are ready, learn pressure canning.

This guide is meant to teach you how home canning works. When you actually can a food, always use the exact processing method, jar size, headspace, time, pressure, ingredient proportions, and altitude adjustments given in a current research-tested recipe from the USDA, National Center for Home Food Preservation, or a university Cooperative Extension program.

Why Learn to Can?
Home canning is not necessary for living a homemade life. You can make bread without canning tomatoes, grow a garden without owning a pressure canner, and freeze extra produce instead of putting it into jars.
But canning becomes especially useful when you regularly find yourself with more food than you can eat while it is fresh.
A strawberry sale becomes jam for several months. A cucumber harvest becomes pickles. A large tomato crop can become sauce or canned tomatoes. Eventually, pressure canning can turn homemade broth, beans, vegetables, and certain soups into shelf-stable pantry ingredients.
It is also a very tangible skill. You start with something perishable and end with jars you can see, label, stack, share, and eventually bring back to the table.
For me, that is part of the appeal of learning these older household skills. They are practical. You can actually see what you accomplished.
The Most Important Canning Rule
Canning is different from ordinary cooking.
If I am making soup for dinner, I can add another onion, toss in more carrots, reduce the liquid, thicken it, add cream, or change the seasoning without turning dinner into a food-preservation experiment.
Once that soup is sealed inside a jar and stored at room temperature, however, density, acidity, ingredient proportions, jar size, and processing method affect how safely heat reaches the food.
This is why a tested canning recipe is not simply a suggestion for flavor.
It is part of the preservation process.
Want more garlic in your green beans? Add it when you heat them for dinner.
Want noodles in your canned soup? Add freshly cooked noodles after opening the jar.
Want to preserve your own completely original salsa recipe? Freeze it unless you can match it to a research-tested canning process.
There is almost always a way to preserve what you want to make. Sometimes canning simply is not that method.
How Home Canning Actually Works
Home canning uses heat to destroy microorganisms that could spoil food or make it unsafe, while driving air out of the jar. As the jar cools after processing, the contents contract and a vacuum develops beneath the lid.
That vacuum helps hold the lid in place and protects the properly processed food from outside contamination while it is stored.
This leads to one of the most important concepts in this entire guide:
A lid can vacuum-seal even when the food did not receive the correct processing method or enough heat. The “ping” tells you a vacuum formed. It does not prove the food received a safe canning process.
This is why we never judge canning safety by the seal alone.
Why Acidity Matters
The dividing line between water-bath canning and pressure canning is largely about acidity.
Foods with enough natural acid—or foods safely acidified according to a tested recipe—can be processed using boiling water because the acidic environment prevents the growth of Clostridium botulinum, the organism associated with botulism.
Low-acid foods do not provide that protection. They need the higher temperatures produced in a pressure canner.
In home canning guidance, foods with a pH of 4.6 or below are treated as acid foods. Foods above pH 4.6 are considered low-acid.
Generally High-Acid or Acidified Foods
- Most fruits
- Jams and jellies
- Fruit preserves and fruit butters from tested recipes
- Pickles
- Relishes
- Sauerkraut
- Properly acidified tomatoes
- Tested salsas with sufficient acid
Low-Acid Foods
- Green beans
- Carrots
- Potatoes
- Corn
- Peas
- Most fresh vegetables
- Meat
- Poultry
- Seafood
- Stocks and broths
- Many soups and mixed foods
Those low-acid foods require a pressure-canning process when they are being preserved as shelf-stable foods.
What Can I Safely Can?
This is one of the first questions most of us have. The answer is not simply “anything that fits into a jar.”
Here is a practical beginner's overview:

Raised-Bed Reality Check
Not everything coming out of the garden needs to go into a canning jar. Tomatoes may be canned. Cucumbers may become pickles. Green beans can eventually be pressure canned. That mountain of zucchini? Freezing, drying, zucchini bread, or a tested pickle or relish recipe may make much more sense.
Beginner Canning Equipment
One of the nicest things about water-bath canning is that the basic equipment is relatively simple.
Canning Jars
Use Mason-type glass jars manufactured for home canning. Before every batch, inspect each jar for cracks, chips, or small nicks along the rim.
A damaged rim can interfere with sealing, and a weakened jar is more likely to break during processing.
Two-Piece Canning Lids
The familiar canning closure has two parts: a flat sealing lid and a screw band.
Standard flat lids intended for one-time canning use should be new for each batch. Screw bands may be reused as long as they are clean, rust-free, and undamaged.
Follow the lid manufacturer's current preparation directions. Older instructions often told canners to boil lids before use, while many modern lids are prepared differently.
Boiling-Water Canner
A traditional water-bath canner is a large covered pot with a rack. The pot needs to be deep enough to keep the jars covered with the required amount of boiling water during processing.
A large stockpot can sometimes serve the same purpose if it is deep enough and has a rack that keeps the jars off the bottom.
Jar Lifter
This is one tool I would not skip. Canning jars are extremely hot, wet, and slippery. A proper jar lifter grips the jar below the neck and lets you move it while keeping it upright.
Canning Funnel
A wide-mouth funnel makes filling jars cleaner and helps keep food off the rim.
Bubble Remover and Headspace Tool
This inexpensive tool helps remove trapped air when a recipe calls for it and makes it much easier to measure headspace accurately.
Other Helpful Supplies
- Large ladle
- Clean kitchen towels
- Timer
- Measuring cups and spoons
- Cutting board and knives
- Labels or permanent marker
- Cooling rack or folded towel
- A printed or easily visible copy of your tested recipe
Pressure-Canning Equipment
For pressure canning, you need an actual pressure canner—not simply a small pressure cooker.
Pressure canners generally use either a dial gauge or a weighted gauge to indicate pressure. Read your model's instruction manual before your first use.
If you use a dial-gauge canner, current NCHFP guidance recommends checking the gauge for accuracy before use each year. Cooperative Extension offices or the manufacturer may be able to help with gauge testing.
Jars, Lids, Rings, and Sterilizing
Do I Have to Sterilize Empty Jars?
Not always.
When a tested boiling-water process is 10 minutes or longer, the jars receive the necessary treatment during processing and generally do not need to be pre-sterilized. They should still be clean and kept appropriately hot before filling.
When the tested processing time is less than 10 minutes, empty jars need to be sterilized according to current canning guidance before they are filled.
Pressure-canned jars do not need to be pre-sterilized because of the processing they receive in the canner.
Why Keep Jars Hot?
Besides being part of proper canning procedure, keeping jars appropriately hot reduces sudden temperature changes that can contribute to glass breakage.
Hot food should go into appropriately heated jars rather than cold jars taken directly from a cupboard.
How Tight Should the Ring Be?
Follow the lid manufacturer's instructions. The band needs to hold the lid in position, but overtightening can interfere with the venting of air from the jar during processing.
Canning Terms Every Beginner Should Know
Headspace
Headspace is the unfilled space between the surface of the food or liquid and the underside of the lid.
Different foods require different headspace. You will commonly see measurements such as 1/4 inch, 1/2 inch, or 1 inch.
Too little headspace may allow food to expand into the sealing area. Too much can interfere with proper vacuum formation or lead to discoloration.
Use the measurement in the recipe. Do not eyeball it.
Hot Pack
In a hot pack, the food is heated before it is placed into the jars.
Hot packing often removes more air from food, may improve quality, and can sometimes allow more food to fit into a jar.
Raw Pack
In a raw pack, prepared raw food is placed into the jar and covered with the liquid specified in the recipe.
If the recipe calls for hot pack, do not decide to raw pack simply because it looks faster. The processing recommendation was developed for the preparation method described.
Processing Time
Processing time is not just cooking time. It is the tested amount of time the filled jars must remain under the specified canning conditions.
Siphoning
Siphoning is the loss of liquid from a jar during or immediately after processing.
It can happen when temperature or pressure changes too rapidly, when headspace is incorrect, or for other processing reasons. A small amount of liquid loss does not automatically mean the jar is unsafe, but you should never open a sealed jar simply to replace liquid after processing.
How to Choose a Safe Canning Recipe
One of the hardest parts of learning to can today is not finding a recipe.
It is figuring out which recipe to trust.
A beautiful photograph, hundreds of comments, thousands of saves, or a story about a recipe being used for generations does not establish that the process was scientifically validated.

What Should Make You Stop and Double-Check?
- The recipe says jar sealing alone proves safety.
- Low-acid vegetables are processed only in boiling water.
- The author says processing time does not matter.
- The recipe tells you to invent your own vegetable-to-vinegar ratio.
- It uses oven, dishwasher, or open-kettle canning.
- The recipe relies on an electric multi-cooker for low-acid pressure canning using USDA times.
- It says altitude does not matter.
- It substantially changes a tested recipe without explaining tested guidance for the change.
Why Altitude Matters in Home Canning
This is one of the easiest beginner details to overlook.
Water boils at a lower temperature as elevation increases. Because of that, boiling-water processing times need altitude adjustments, and pressure-canning recipes require the correct pressure for elevation and gauge type.
Do not simply use the first number you see in a processing chart.
Before your first canning day, find the elevation of your home and write it inside your canning notebook. Then you do not have to look it up every time.
How to Water-Bath Can: Step by Step
Water-bath canning is where I would recommend most beginners start.
You get to practice nearly all of the basic jar-handling skills without learning pressure-canner management at the same time.
1. Read the Entire Recipe
Before chopping a single berry or cucumber, identify:
- Required jar size
- Raw-pack or hot-pack method
- Headspace
- Processing time
- Altitude adjustment
- Any required acid
2. Prepare the Canner
Put the rack in the canner and begin heating the water before the food is ready.
Current NCHFP instructions call for preheating water to approximately 140°F for raw-packed foods and about 180°F for hot-packed foods before filled jars are loaded.
3. Prepare the Jars
Wash and inspect the jars. Keep them appropriately hot until you are ready to fill them.
4. Prepare the Food Exactly as Directed
Measure ingredients rather than estimating. Cut food to the size specified. Use the required vinegar, lemon juice, citric acid, or other ingredient when the tested recipe calls for it.
5. Fill the Jars
Use the jar size listed in the recipe. Add food and liquid as instructed and leave the exact headspace.
6. Remove Air Bubbles
If the recipe calls for it, slide a nonmetallic bubble remover around the inside of the jar to release trapped air.
Recheck headspace afterward because removing bubbles can change the food level.
7. Clean the Jar Rim
Food residue on the sealing surface can prevent a good seal.
8. Apply the Lid and Band
Center the lid and apply the band according to the manufacturer's instructions. Do not overtighten it.
9. Load the Canner
Keep jars upright as you lower them into the canner.
The water should be at least 1 inch above the tops of the jars. For processing times longer than 30 minutes, current NCHFP instructions call for at least 2 inches of water over the jars.
10. Bring the Water to a Vigorous Boil
Processing time begins once the canner reaches the required full boil—not simply when the jars go into the pot.
11. Maintain the Boil for the Entire Processing Time
Keep the canner covered and maintain a complete boil.
If the water stops boiling during processing, current NCHFP guidance says to return it to a vigorous boil and restart the processing time from the beginning.
12. Finish the Process Correctly
When processing is complete, turn off the heat, remove the canner lid, and follow the tested instructions for the end of the process. Current NCHFP boiling-water instructions include waiting 5 minutes before removing the jars.
13. Remove the Jars Upright
Use the jar lifter and keep each jar upright. Do not tip it to pour water off the lid.
14. Leave Them Alone
Place the jars on a towel or rack with space between them and let them cool undisturbed for 12 to 24 hours.
Do not press the lids, tighten the rings, turn jars upside down, or move them unnecessarily.
ABMH Garden-to-Pantry Note
Water-bath canning is one of the easiest ways to begin connecting the garden and the pantry. A basket of berries becomes jam. A cucumber harvest becomes pickles. Tomatoes become something that can come back to the table months after the garden is finished.
How Pressure Canning Works
Pressure canning feels more intimidating because there is a gauge, steam, and pressure involved.
But the basic idea is simple: low-acid foods need temperatures higher than boiling water can provide. A pressure canner allows those higher temperatures to be reached safely.
I would learn water-bath canning first, but I would not treat pressure canning as some advanced skill you can never learn.
It is another process with another set of steps.
Pressure Canner vs. Pressure Cooker
They are not interchangeable for USDA home-canning processes.
USDA pressure-canning recommendations were developed for pressure canners with sufficient capacity, not small pressure saucepans or electric multi-cookers.
The Basic Pressure-Canning Process
- Read your tested recipe and canner manual. Your equipment instructions and food-processing instructions work together.
- Add the required amount of water to the canner. General guidance commonly begins with a few inches, but some foods require more. Follow the specific process.
- Load filled jars onto the rack. Keep them upright.
- Lock the canner lid. Leave the vent open or weight off initially as directed.
- Heat until steam flows freely from the vent.
- Vent the canner for 10 full minutes. This helps remove trapped air so the canner can reach the expected temperature.
- Close the vent or apply the weight. Allow the canner to pressurize.
- Start timing only when the correct pressure has been reached.
- Maintain the required pressure for the entire process.
- If pressure drops below the required level, bring it back up and restart the full processing time.
- When processing is complete, turn off the heat.
- Allow the canner to depressurize naturally. Do not force-cool it with water or open the vent early.
- After the canner has fully depressurized, follow the canner instructions for opening it safely. Current NCHFP guidance includes waiting 10 minutes after opening the vent/removing the weight before unfastening the lid.
- Open the lid away from your face. Escaping steam can burn.
- Remove jars and let them cool undisturbed for 12 to 24 hours.
What About Atmospheric Steam Canning?
You may also see atmospheric steam canners sold for home preserving.
These are different from pressure canners. Research supports their use for certain naturally high-acid and properly acidified foods when specific requirements are followed.
Current NCHFP guidance says USDA/NCHFP processing times for appropriate acid foods may be used with a properly operated atmospheric steam canner when all required controls are met, including altitude adjustment, proper venting, sufficiently hot jars, and a total processing time of 45 minutes or less.
For a complete beginner, however, I still think a traditional boiling-water canner is the simplest place to learn the fundamentals.
Special Canning Situations Every Beginner Should Know
Tomatoes Need Special Attention
Tomatoes are one of the foods beginners most often assume are automatically safe for water-bath canning.
Modern home-canning guidance does not make that assumption because some tomatoes can have a pH above 4.6.
Current NCHFP guidance for whole, crushed, or juiced tomatoes calls for acidification with bottled lemon juice or citric acid:
For each quart: 2 tablespoons bottled lemon juice OR 1/2 teaspoon citric acid
For each pint: 1 tablespoon bottled lemon juice OR 1/4 teaspoon citric acid
Continue to follow the complete tested tomato recipe for jar size, headspace, preparation, processing time, and altitude.
Pickles Depend on Acid
Pickling works because the recipe creates an acidic environment.
That means vinegar is not simply seasoning.
Current NCHFP guidance recommends commercial white distilled or cider vinegar labeled 5% acidity for tested pickling recipes.
Do not reduce the vinegar, increase the water, or add significantly more vegetables because you prefer a milder pickle.
Find a different tested recipe that matches the flavor you want.
Salsa Is Not Just Canned Tomato Sauce
Salsa combines acidic tomatoes with low-acid ingredients such as peppers and onions.
The proportions matter.
Do not simply take your favorite fresh salsa recipe, put it into jars, and guess at a water-bath time. Use a salsa recipe developed for home canning.
Jams and Jellies
Jam is one of my favorite beginner projects because it teaches jar preparation, filling, headspace, processing, cooling, and seal checking in a relatively approachable batch.
Sugar, fruit, acid, and pectin also affect how the jam sets.
If you want lower-sugar jam, use a recipe developed specifically for reduced-sugar or no-sugar pectin rather than cutting the sugar drastically in a traditional recipe.
Soup
Home-canned soup can eventually become one of the most useful things in a homemade pantry, but it needs to follow an appropriate tested pressure-canning recipe.
NCHFP soup directions specifically say not to add:
- Noodles or other pasta
- Rice
- Flour
- Cream
- Milk
- Other thickening agents
Add those ingredients when you open and prepare the soup for serving instead.
Pumpkin and Winter Squash
Tested pressure-canning directions exist for properly prepared cubes of pumpkin and winter squash.
Mashed or pureed pumpkin and winter squash are not recommended for home canning because the density makes reliable heat penetration difficult to establish.
Freeze puree instead.
Zucchini and Summer Squash
This one is especially useful for a backyard gardener to know.
Older publications once included general pressure-canning directions for summer squash and zucchini, but those recommendations were withdrawn because the old processing documentation could not be supported.
Plain summer squash is better frozen or dried. If you want a shelf-stable version, choose a current tested pickle or relish recipe designed for zucchini or summer squash.
Foods and Canning Methods to Be Especially Careful With
Some things look like canning because a food ends up inside a sealed jar, but that does not mean the food went through a validated home-canning process.
Methods Not Recommended for Shelf-Stable Home Canning
- Open-kettle canning
- Oven canning
- Dishwasher canning
- Microwave canning
- Simply turning hot jars upside down to seal
- Vacuum sealing as a substitute for heat processing
Foods Without General Home-Canning Recommendations
Be especially cautious with online instructions for:
- Bread or cake baked and sealed in jars
- Butter canned at home
- Pesto
- Garlic or herbs in oil intended for room-temperature storage
- Pureed pumpkin or winter squash
- Homemade soups containing cream, milk, noodles, rice, flour, or starch thickeners
Freezing or refrigeration is often the better answer for these foods.
After Canning: Cooling, Checking Seals, and Pantry Storage
Cooling the Jars
Once the jars are out of the canner, this becomes the easiest step:
Leave them alone.
Let jars cool at room temperature for 12 to 24 hours.
Do not:
- Retighten the screw bands
- Push down on the center of the lids
- Turn jars upside down
- Tip jars to drain water from the lids
- Put hot jars in cold water
Testing the Seal
After the jars have cooled for 12 to 24 hours, remove the bands and check the seals.
A properly sealed lid should be concave and should not flex up and down when the center is pressed.
Why Remove the Rings for Storage?
Once a jar is confirmed sealed, remove the screw band for pantry storage.
This makes it easier to notice if the lid later loses its seal and prevents food residue hidden beneath the ring from sitting against the jar during storage.
Wash the jar and lid gently, dry them, label them, and store them without the ring.
Where Should Home-Canned Food Be Stored?
Choose a clean, cool, dark, dry location.
NCHFP recommends a storage temperature of roughly 50°F to 70°F for best quality and suggests canning amounts you expect to use within about a year.
Label Every Jar
At minimum, write:
Food + Date
I also like the idea of adding the recipe source or batch when it would be useful later.

Inspect a jar before opening it.
Do not use food from a jar showing suspicious signs such as:
- Bulging lid
- Loose or unsealed lid
- Leaking
- Unexplained dried food coming from under the lid
- Mold
- Unusual bubbling
- Spurting liquid when opened
- Unexpected color or odor
Canning Troubleshooting
My Jar Didn't Seal
First, do not panic. One unsealed jar does not mean the entire batch failed.
If the food was originally prepared and processed using a current tested recipe, NCHFP allows properly handled food to be reprocessed within 24 hours using appropriate tested hot-pack directions.
Because reprocessing can affect quality, another easy option is to refrigerate the unsealed jar and use it soon, or freeze the food in an appropriate container.
If you did not use a safe tested process in the first place, a sealed jar does not make the batch safe.
I Lost Liquid From the Jar
This is called siphoning.
It may happen because of rapid temperature or pressure changes, incorrect headspace, fluctuating canner pressure, or other processing factors.
Do not open an otherwise sealed jar simply to top up the liquid.
Food Is Floating
Floating food can be a quality issue rather than an automatic safety failure. Raw-packed fruit, trapped air, or differences in food density can contribute.
Continue to evaluate the jar based on whether you followed the tested process, whether the jar sealed, and whether there are signs of spoilage.
The Lid Popped but I Didn't Process the Jar
Treat that as an unprocessed food.
A vacuum seal is not a substitute for processing.
Common Beginner Canning Mistakes
1. Starting With an Untested Recipe
Start with the processing science first and the pretty jar second.
2. Assuming the Seal Proves Safety
It doesn't. Processing method and time matter.
3. Forgetting Altitude
Processing requirements change with elevation.
4. Using a Larger Jar Than the Recipe Lists
A tested pint process cannot automatically be converted to quarts.
5. Changing Salsa Ratios
Extra onions and peppers add low-acid ingredients. Follow the tested proportions.
6. Reducing Vinegar in Pickles
If you dislike the flavor, choose another tested recipe instead of reducing the acid.
7. Using the Wrong Canner
Low-acid foods require pressure canning.
8. Rushing Pressure-Canner Cooling
Let the canner depressurize naturally.
9. Improvising Thick Ingredients
Flour, starch, cream, pasta, and other additions can change how heat moves through food.
10. Trying to Can Everything
Sometimes freezing, drying, fermenting, or refrigerating is the better preservation method.
11. Making Huge Batches Before Knowing Whether You Like the Recipe
Make one canner load first. There is no reason to store thirty jars of something your family will not eat.
12. Trying to Learn Everything in One Weekend
Canning is much easier when you build skills gradually.
Your First Canning Day
If I were starting from zero, I would not begin with a giant garden harvest and twelve different recipes.
I would choose one uncomplicated high-acid recipe and make one batch.
Before You Start
- Choose a current tested recipe.
- Read it twice.

Beginner Canning FAQ
Can I use my grandmother's canning recipe?
Maybe, but compare it with current USDA, NCHFP, or Cooperative Extension guidance before using it for shelf-stable storage. You can preserve the family tradition without preserving an outdated processing method.
Can I water-bath green beans if I boil them long enough?
No. Plain green beans are low-acid and require pressure canning using a tested process.
Can I use an Instant Pot or electric multi-cooker for low-acid canning?
NCHFP does not support applying USDA pressure-canning processes to electric multi-cooker appliances. Use an appropriate pressure canner for low-acid foods.
Can I reuse the flat lids?
Standard single-use flat canning lids should be new for each canning process. Screw bands may be reused if they remain clean, rust-free, and undamaged.
Can I use fresh lemon juice instead of bottled lemon juice in tomatoes?
When the tested recipe specifies bottled lemon juice, use bottled. Its acidity is standardized.
Can I use homemade vinegar for pickles?
Do not substitute vinegar of unknown acidity in a tested canning recipe. Current NCHFP pickling guidance recommends commercial white distilled or cider vinegar labeled 5% acidity.
Can I add extra onions or peppers to salsa?
Not unless the tested recipe specifically allows that change. Salsa safety depends on the proportion of acid to low-acid ingredients.
Can I thicken soup before I can it?
Not in a general tested soup process. Add flour, starch, cream, noodles, rice, or other thickening ingredients after opening the jar and reheating the soup.
Can I can zucchini from the garden?
There is no current general recommendation for canning plain summer squash or zucchini. Freeze or dry it, or choose a tested pickle, relish, or other specifically tested recipe.
Can I can pumpkin puree?
Home canning of mashed or pureed pumpkin and winter squash is not recommended. Tested pressure-canning instructions are available for properly prepared cubes. Puree can be frozen.
Can I can food without salt?
It depends on the recipe. In some plain vegetable canning recipes salt is primarily for flavor, but in pickling and fermentation it may play a more important role. Follow the tested recipe rather than assuming it can always be removed.
What if a jar doesn't seal?
If the food was originally processed according to a current tested recipe, refrigerate and use it soon, freeze it appropriately, or follow current tested reprocessing instructions within 24 hours.
Do I store jars with the rings on?
NCHFP recommends removing the screw bands after the jars have cooled and the seals have been checked.
How long do I wait before checking the seal?
Let jars cool undisturbed for 12 to 24 hours first.
How long should I keep home-canned food?
For best quality, NCHFP recommends canning quantities you expect to use within about a year and storing properly sealed jars in a cool, dark, dry place.
What if I want to create my own recipe?
Create it—and refrigerate or freeze it. Shelf-stable canning is the place to stay within research-tested parameters.
