Homemade sauerkraut is one of those traditional kitchen skills that can sound much more complicated than it really is. At its simplest, cabbage is mixed with the correct amount of salt and allowed to ferment in its own juices until it becomes pleasantly sour, crisp, and flavorful.
What matters most is not adding a long list of ingredients. Successful sauerkraut depends on a few fundamentals: the correct cabbage-to-salt ratio, clean equipment, keeping the cabbage beneath the brine, using an appropriate fermentation temperature, and allowing enough time for fermentation to finish.
This version is based on research-based home food-preservation guidance and is specifically sized for a small half-gallon batch.
Why Make Sauerkraut at Home?
Homemade sauerkraut has a fresh, crisp texture and naturally sour flavor that develops through lactic-acid fermentation rather than from added vinegar.

Why the Salt Amount Matters

For a half-gallon batch using 2½ pounds of cabbage, this recipe uses 4½ teaspoons of canning or pickling salt. That is the tested small-batch conversion published by Oregon State University Extension.

Ingredients
- 2½ pounds fresh, firm green cabbage
- 4½ teaspoons canning or pickling salt
- 1 teaspoon caraway seeds, optional
Supplemental Brine — Only If Needed
- 1 cup hot water
- 1⅛ teaspoons canning or pickling salt
Cool the supplemental brine completely before adding it. Use it only if the cabbage does not produce enough natural juice to keep all of the cabbage submerged.

- Large mixing bowl
- Sharp knife, mandoline, or cabbage slicer

Instructions
1. Clean your equipment. Wash the fermentation jar, weight, lid, bowl, and utensils with hot soapy water and rinse them thoroughly with very hot water. Wash your hands well before handling the cabbage.
2. Prepare the cabbage. Remove and discard damaged or wilted outer leaves. Rinse the cabbage under cool running water and drain it. Set aside one clean, intact cabbage leaf for later. Cut the cabbage into halves or quarters and remove the firm core.
Remove the outer leaves, cut the cabbage, and remove the core before shredding.
3. Shred and measure the cabbage. Slice the cabbage into long, thin shreds approximately the thickness of a quarter. Measure 2½ pounds of prepared cabbage.
Thin, relatively even shreds help the cabbage salt and ferment consistently.
4. Add the salt. Place the 2½ pounds of shredded cabbage in a large bowl. Sprinkle 4½ teaspoons of canning or pickling salt evenly over the cabbage. Add the optional caraway seeds now, if using.
Sprinkle the measured pickling salt evenly over all of the shredded cabbage.
5. Mix and let the cabbage begin to wilt. Using clean hands, thoroughly mix the cabbage and salt. Continue mixing until the salt is well distributed. The cabbage will begin to soften and release moisture. Allow it to rest for about 15–20 minutes if it needs a little help becoming juicy.
6. Massage until juicy. Squeeze and massage the cabbage with clean hands until it is noticeably wilted and enough liquid has collected to begin forming its own brine.
The cabbage should soften and become juicy as it is mixed and massaged with the salt.
7. Pack the jar firmly. Transfer the cabbage to the clean half-gallon jar a handful at a time. Press each layer down firmly with a clean fist or kraut tamper to remove air pockets and encourage the brine to rise.
Leave approximately 3–4 inches of headspace between the packed cabbage and the top of the jar.
Pack firmly and evenly to remove trapped air pockets.
8. Add every bit of natural brine. Pour the liquid remaining in the mixing bowl into the jar. Press the cabbage again so the liquid rises over the shredded cabbage.
9. Add the reserved cabbage leaf. Fold the clean cabbage leaf to fit inside the jar and place it over the shredded cabbage. This helps keep small shreds from floating above the brine.
10. Add the fermentation weight. Place a clean fermentation weight over the cabbage leaf. The cabbage should remain completely submerged throughout fermentation.
Aim for approximately 1–2 inches of brine above the cabbage when the size of the jar allows it.
The cabbage leaf and weight help keep every shred safely beneath the brine.
11. Add supplemental brine only if necessary. If the cabbage does not produce enough juice to cover all of the solids, dissolve 1⅛ teaspoons canning or pickling salt in 1 cup hot water. Cool completely, then add only as much as necessary to cover the cabbage.
Do not top the jar with plain water because doing so dilutes the salt concentration.
12. Attach the fermentation lid. Wipe the rim of the jar clean and attach a fermentation airlock according to the manufacturer's instructions.
13. Ferment at the proper temperature. Set the jar on a plate or shallow dish to catch possible overflow. Keep it out of direct sunlight and preferably in a dark location.
For this small batch, keep the jar at approximately 70–75°F.
An airlock allows carbon dioxide to escape while helping maintain the low-oxygen environment needed for fermentation.
14. Check the small batch daily. Make sure the cabbage remains submerged beneath the brine. Small jars can ferment more quickly than traditional large crocks, so check the jar every day.
15. Allow the fermentation to finish. Oregon State University Extension's half-gallon small-batch guidance gives approximately 1–2 weeks at 70–75°F. If the room is closer to 60–65°F, this small batch may take approximately 2–3 weeks. Temperatures below 60°F may prevent proper fermentation, while temperatures above 75°F can contribute to soft kraut.
Do not stop fermentation only because a certain number of days has passed. Near the expected finish range, use a clean utensil to check the kraut. Properly finished sauerkraut should have the characteristic clean, pleasantly acidic aroma and flavor of sauerkraut rather than tasting like salty raw cabbage. It should remain reasonably firm rather than becoming slimy, and active bubbling should have slowed substantially or stopped.
Optional pH check: If you use a properly calibrated food pH meter, University of Minnesota Extension's general vegetable-fermentation guidance considers a ferment ready when the pH has reached 4.6 or below and active bubbling has stopped. A pH meter is an additional check, not a reason to change the cabbage, salt, temperature, or other directions in this tested small-batch method.
16. Refrigerate the finished sauerkraut. When fermentation is complete and the flavor is to your liking, remove the airlock and tightly cover the jar with a clean refrigerator-safe lid.
Keep the sauerkraut refrigerated and keep the cabbage covered by its brine during storage.
Once fermentation is complete, tightly cover the sauerkraut and move it to the refrigerator.
How Long Does Small-Batch Sauerkraut Take?
Fermentation time is connected to both temperature and container size. A small half-gallon jar can ferment considerably faster than a traditional large crock.
70–75°F: Approximately 1–2 weeks for this small batch
60–65°F: Approximately 2–3 weeks
Below 60°F: Fermentation may not proceed properly
Above 75°F: The sauerkraut may become soft
This is why research-based fermentation instructions can show different time ranges. Oregon State University Extension's half-gallon small-batch guidance uses approximately 1–2 weeks at 70–75°F, while the National Center for Home Food Preservation's traditional larger-batch sauerkraut method uses approximately 3–4 weeks at 70–75°F. Container size and the specific tested method matter, so use the directions that belong to the recipe you are making rather than mixing pieces from different methods.
How Do I Know When Sauerkraut Is Finished?
Do not rely only on the calendar. The finished cabbage should remain reasonably firm rather than soft and slimy, and it should smell and taste distinctly like sauerkraut rather than simply tasting like salty raw cabbage.
Bubbling is common while the ferment is active. As fermentation nears completion, bubbling will slow considerably or stop.
Normal Signs During Fermentation
Sauerkraut changes as the naturally occurring lactic-acid bacteria ferment the sugars in the cabbage. Some things that can look unusual are perfectly normal.
- Bubbles moving upward through the brine
- Fizzing during active fermentation
- Cloudy brine
- White sediment collecting toward the bottom
- A clean, increasingly sour aroma
- Cabbage becoming paler as it ferments
- A small amount of brine overflowing during vigorous fermentation
What About Scum, Mold, Pink Sauerkraut, or Sliminess?
Fermentation advice can become confusing here because not every surface change means the same thing.
White surface scum: A small amount can occur when the cabbage is not adequately protected from air. Research-based guidance allows it to be skimmed away.
Small isolated mold patches: Oregon State University Extension states that small surface patches may be skimmed off. Large amounts of mold are a reason to discard the batch.
Pink coloring: Pink coloration does not automatically mean the kraut is unsafe. It can result from yeast or natural cabbage pigments. Pink kraut should be discarded if it is also slimy or otherwise clearly spoiled.
Slimy sauerkraut: Sliminess is considered a sign of spoilage. Discard the sauerkraut.
Large amounts of mold or obvious spoilage: Discard the batch.
Keeping the Cabbage Beneath the Brine
A low-oxygen environment is one of the most important parts of vegetable fermentation. Keep the cabbage completely submerged beneath the brine throughout the fermentation period.
A folded cabbage leaf works as a helpful barrier for the small shreds, while a food-grade fermentation weight keeps everything below the surface.
Research-based guidance recommends keeping cabbage approximately 1–2 inches beneath the brine. If your cabbage does not release enough liquid to accomplish this, use the supplemental salt brine in the recipe rather than plain water.
Tips for the Best Homemade Sauerkraut
Start with firm cabbage
Mature, firm heads of cabbage make better sauerkraut than wilted or damaged cabbage.
Use canning or pickling salt

Mix the salt thoroughly

Watch the thermometer, not just the calendar
Fermentation speed changes with temperature. A jar fermenting at 72°F will behave differently from one sitting in a 62°F basement.
Simple Flavor Variations
Once you are comfortable making traditional cabbage sauerkraut, Oregon State University Extension allows a small amount of certain vegetables or seasonings for variety. Keep additions modest and do not reduce the measured pickling salt in the base recipe.
- Caraway: Add 1 teaspoon caraway seeds with the salt.
- Garlic: Add a small amount of sliced garlic.
- Carrot: Add a small amount of finely grated carrot.
- Beet: Add a small amount of grated beet.
- Juniper: Add a few lightly crushed juniper berries.
- Hot pepper: Add a small amount for a spicier batch.

How to Store Homemade Sauerkraut
Once fermentation is finished, remove the fermentation lid and tightly cover the jar with a refrigerator-safe lid.

Keep the cabbage beneath its brine and always use a clean utensil when removing sauerkraut from the jar.
