Homemade Mini Cornbread Loaves and Muffins

Recipes · Bread & Baking

Golden cornbread muffins made with buttermilk, butter, oil, sugar, and honey for a lightly sweet side that belongs beside chili.

These muffins were developed to sit beside a hearty bowl of chili, but they are just as useful with soup, beans, stew, barbecue, or an ordinary fall dinner. A standard muffin tin keeps the recipe practical, easy to portion, and attainable in most home kitchens.

I baked the muffin version in the ABMH kitchen on September 1, 2026. I added one extra teaspoon of sugar and one extra teaspoon of honey to the preserved working formula, and the muffins were delicious. That successful batch made 12 muffins and baked for 15 minutes at 400°F.

From the ABMH kitchen: The tested muffin version is now the controlling recipe. Mini loaves may be added later only after their portion size, yield, and bake time are physically tested.

*Prep and total time are editorial estimates that include the 10-minute batter rest; the 15-minute bake time, 400°F oven, and 12-muffin yield were verified in the kitchen test.

Why You’ll Love These Cornbread Muffins

  • They are buttery without being heavy. Butter supplies flavor while a smaller amount of neutral oil helps support a moist crumb.
  • The sweetness stays dinner-friendly. Sugar and honey round out the corn flavor without turning the muffins into cupcakes.
  • The format is practical. A standard muffin tin creates 12 individual servings without requiring a special pan.
  • They were tested with chili. The lightly sweet, buttery crumb balances a rich, tomato-forward bowl.

The original development images explored more than one pan format; the verified recipe below is specifically for 12 standard muffins.

A Bit More Homemade: The best homemade recipe is not always the fussiest version. A familiar muffin tin, pantry baking staples, and one successful kitchen test are enough to put a useful recipe on the table.

Ingredients You’ll Need

Familiar baking ingredients create a buttery, lightly sweet cornbread that still belongs beside a savory dinner.

Dry Ingredients

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 4 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • ¾ teaspoon fine salt

Wet Ingredients

  • 1 cup buttermilk
  • 2 large eggs
  • 6 tablespoons unsalted butter, melted and slightly cooled
  • 2 tablespoons avacado oil
  • 3 tablespoons honey

Allergen and baking note: This recipe contains wheat, dairy, and eggs. Use fresh baking powder and baking soda, and let the melted butter cool slightly before mixing so it does not begin cooking the eggs.

Equipment I Use for This Recipe

  • Standard 12-cup muffin tin
  • Two medium mixing bowls
  • Whisk and flexible spatula or wooden spoon
  • Dry and liquid measuring cups and measuring spoons
  • Wire cooling rack

How to Make Cornbread Muffins

The tested sequence is simple: mix dry and wet ingredients separately, combine gently, rest, portion, and bake.

1. Heat the oven and prepare the pan.

Preheat the oven to 400°F. Lightly grease a standard 12-cup muffin tin or prepare it the same way you normally prepare muffins.

2. Mix the dry ingredients.

Whisk the cornmeal, flour, sugar, baking powder, baking soda, and salt together in a medium bowl. Mix thoroughly now so the leavening is distributed before the wet ingredients are added.

3. Mix the wet ingredients.

In a separate bowl, whisk together the buttermilk, eggs, melted butter, neutral oil, and honey. The butter should be liquid but not hot.

4. Combine gently.

Pour the wet mixture into the dry mixture and fold just until no dry pockets remain. A few small lumps are fine; continued mixing can make the muffins tougher.

Fold only until the dry pockets disappear; a few small lumps are better than overmixing.

Do not chase a perfectly smooth batter: Cornmeal continues absorbing moisture during the rest. Stop mixing once the dry pockets are gone.

5. Rest the batter.

Let the batter stand for 10 minutes. This gives the cornmeal time to absorb moisture and remains part of the preserved, kitchen-tested method.

6. Portion the muffins.

Divide the batter evenly among the 12 prepared muffin cups.

The development image shows both pan ideas. The current verified recipe divides the batter among 12 standard muffin cups; mini-loaf timing remains untested.

7. Bake for 15 minutes.

Bake at 400°F for 15 minutes, until the tops are golden and a tester inserted in the center comes out clean.

8. Cool briefly.

Let the muffins cool in the pan briefly, then transfer them to a wire rack so the crumb can finish setting without trapping steam underneath.

The lightly sweet, buttery crumb was developed specifically to sit comfortably beside a hearty bowl of chili.

Serving Ideas · Tested Pairing

Serve These Cornbread Muffins With Chili

These muffins were tested with Superior Homemade Chili with Beef and Sausage. The chili is rich, tomato-forward, and gently spiced; the cornbread adds a buttery, lightly sweet contrast without competing with the bowl.

They can also be served with soup, beans, stew, barbecue, or a simple fall dinner. Keeping the recipe evergreen allows the same muffins to support Halloween, Game Day, and ordinary weeknight meals without creating duplicate seasonal recipes.

Tips for the Best Cornbread Muffins

Cool the Butter Slightly

Melted butter should remain liquid, but it should not be hot enough to begin cooking the eggs.

Mix Only Until Combined

Fold until the dry pockets disappear, then stop. A few small lumps are normal.

Keep the 10-Minute Rest

The rest gives the cornmeal time to absorb moisture before the batter goes into the oven.

Use the Tested Pan

The verified directions are for 12 standard muffins. Do not apply the 15-minute bake time to mini loaves without testing.

Storage, Reheating and Freezing

For the best texture, serve the muffins warm on the day they are baked. Let them cool completely before placing them in an airtight container so trapped steam does not make the surfaces damp. Store at room temperature for up to 2 days.

For longer storage, freeze fully cooled muffins in a freezer-safe container or wrapping. Thaw before serving and warm gently in short microwave intervals or a low oven. The exact best next-day and freezer-reheating method has not yet been compared in the ABMH kitchen, so no single method is being labeled as tested.

The Honest Cost of Cornbread Muffins

What it cost to make

  • Cornmeal, flour, sugar, salt, and leavening (recipe portions from retail packages)about $0.59 used
  • Buttermilk and eggs (1 cup buttermilk plus 2 eggs)about $0.69 used
  • Butter and neutral oil (6 tablespoons plus 2 tablespoons)about $0.66 used
  • Honey (2 tablespoons plus 1 teaspoon)about $0.68 used
Per muffin, makes 12 muffinsabout $0.22

Estimated batch total: about $2.62. Buying every package from an empty pantry was estimated at about $30.60, but that checkout leaves most of the cornmeal, flour, sugar, oil, honey, leavening, and other ingredients for later use. The source record does not preserve every item-level package size and price, so those details remain identified instead of reconstructed.
Equipment: Mixing bowls, whisk, measuring tools, and a standard muffin tin were treated as already-owned reusable equipment. A mini-loaf pan is not required.

Compared to buying it

about $0.22homemade, per muffin vs about $0.92comparable grocery-bakery muffin

Less

Two comparable grocery-bakery six-packs were approximately $10.98 total. The scratch batch was approximately $2.62 for the same 12-piece count.

Time

About 10 minutes hands-on, estimated. Plus a 10-minute batter rest and 15 minutes of baking that do not require constant attention.

Worth it?

Worth It

The muffins cost substantially less per piece than the grocery-bakery comparison, use a standard pan, and let you control the sweetness and ingredient balance. The short method and successful pairing with chili make this a practical from-scratch swap, especially when the pantry ingredients will be used again.
